depends on what you're going to do with your pics and how picky you are. You'll be able to squeeze off enough shots through the play. I recommend shooting RAW if you have the 40D. You should be able to freeze most action at 1/1200th of a second. The action, as you already know, is very fast and unless it's very cloudy, or at night or indoors ISO 400 should give you sufficient speed. 2.8 aperature is too wide as it narrows the DOF too greatly so you may miss more shots than you get. If you're shooting from the stands a 10-400 will serve you better. The 70-200 will be sufficient if you are close to the water's edge. It was my second water polo shoot ever and took a few games to get hang of it as it's a much faster sport than is given credit for.
